- 250g quinoa, cooked according to package instructions

- ¼ cup (35g) chopped walnuts
- 2 tablespoons (30ml) olive oil
- 1 tablespoon (15ml) apple cider vinegar
- 1 teaspoon honey
- Salt and freshly ground black pepper, to taste
To start, cook the quinoa according to package instructions and let it cool to room temperature. Meanwhile dice your vegetables and apples.
In a large bowl, combine the cooked quinoa, diced apple, carrot, cucumber, goat cheese, and walnuts.
