Creamy Avocado Pasta

A quick and easy weeknight dinner that requires just a few simple ingredients:

  • 300g spaghetti
  • 1 ripe avocado (about 150g)
  • 2 cloves garlic, minced
  • Juice of half a lemon (about 30ml)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Boil the spaghetti according to package instructions. While the pasta is cooking, remove the flesh of the avocado into a blender or food processor. Add garlic, lemon juice, salt, and pepper. Blend until smooth. Once the spaghetti is cooked and drained, add it to the avocado sauce and toss well. Garnish with fresh parsley and serve immediately.

  • 1 ripe avocado (about 150g)
  • 400g chickpeas, drained and rinsed
  • 1 small red onion, diced (about 60g)

  • 1 ripe avocado (about 150g)
  • 1 ripe mango, chopped (about 150g)
  • 200ml almond milk
  • 1 tablespoon chia seeds (7g)

Blend all the ingredients until smooth. Pour into a bowl and top with your favorite fruits, nuts, or granola.
