Exploring Moroccan Quinoa Delights: A Journey through Traditional Dishes

Morocco, a land of vibrant culture and rich culinary traditions, offers some of the most delightful quinoa dishes that capture the essence of its exotic flavors. Quinoa, a powerful superfood originating from South America, has found its way into Moroccan cuisine, adding nutritional value and versatility to traditional recipes.

One of the highlights in Moroccan quinoa cuisine is Quinoa Tabbouleh. This dish resembles traditional tabbouleh but replaces bulgur with quinoa. With its nutty flavor and slightly crunchy texture, quinoa adds a unique element to this classic Mediterranean salad.

Ingredients:

  • 180g Quinoa
  • 450ml Water/Vegetable Stock
  • 2 large Tomatoes, diced
  • 2 stalks Parsley, chopped
  • 0.6g Mint leaves, chopped
  • 1 small Red onion, finely chopped
  • 3 tbsp Olive oil
  • Juice of 2 lemons
  • Salt to taste
  • Pepper to taste

First, rinse the quinoa thoroughly under cold water. Bring the water or stock to a boil and add the quinoa. Reduce heat, cover, and let it simmer for 15 minutes until all liquid is absorbed and quinoa is tender. Once cooked, leave it to cool.

In the meantime, prepare the other ingredients. Finely chop the parsley and mint leaves. Dice tomatoes and finely chop the red onion.

Mix all the diced vegetables together in a large bowl. Add the cooled quinoa, olive oil, lemon juice, salt, and pepper to the mixture. Toss everything together until well combined.

Quinoa Tagine is another Moroccan staple that adds an interesting twist by replacing couscous or rice with quinoa. This hearty dish is packed full of flavor from a variety of spices, raisins, and almonds, providing a comforting one-pot meal.

Ingredients:

  • 180g Quinoa
  • 300ml Water/Vegetable Stock
  • 2 medium Chickpeas (canned), drained and rinsed
  • 450g Mixed vegetables (carrots, zucchini, bell peppers), sliced
  • 60g Raisins
  • 30g Almonds
  • 2 tbsp Olive oil
  • 1 tsp Cumin powder
  • 1 tsp Paprika
  • 0.5 tsp Turmeric
  • 0.5 tsp Ginger
  • 0.5 tsp Salt or to taste
  • Pepper to taste

Start by heating some olive oil in a tagine pot or a heavy-bottomed skillet. Add chopped onions and sauté until they soften, then add your mixed vegetables and let them cook for 5 minutes.

Stir in the spices: cumin, paprika, turmeric, and ginger. Pour in the water or stock. Bring to a boil, cover, and reduce heat; leave to simmer for 20–30 minutes until the vegetables are tender.

Add the quinoa along with raisins and almonds. Stir well to combine all ingredients. Cook covered over low medium heat for another 15-20 minutes until the quinoa has absorbed most of the liquid and is cooked.

The dish can be garnished with fresh cilantro or chopped parsley before serving
