Chicken Stir-Fry

Ingredients:
  • Boneless, skinless chicken breasts - 400 grams (8 oz)
  • Vegetables (such as bell peppers, broccoli, snap peas) - a mix of about 500 grams (1 lb)
  • Soy sauce - 4 tablespoons
  • Garlic cloves - 2-3 minced
  • Ginger - 1-inch piece, grated
  • Oyster or hoisin sauce - 2 tablespoons (optional)

  • Cornstarch - 1 teaspoon mixed with 2 teaspoons water for thickening

Slice the chicken into strips and marinate it briefly in half the soy sauce. In a large skillet or wok, stir-fry the chicken over high heat until almost cooked through. Remove from pan and set aside.

In the same pan, sauté garlic, ginger, and vegetables until tender-crisp. Add the remaining soy sauce, oyster/hoisin sauce (if using), and sesame oil. Return the chicken to the skillet, add a bit of water or stock if needed, then add the cornstarch slurry to thicken the sauce.
